Sambal Chicken
Ingredients:
¾ cup (packed) light brown sugar
½ cup rice vinegar
¼ cup hot chili paste (Sambal Oelek)
¼ cup fish sauce (such as Nuoc Mam Nhi)
¼ cup sriracha sauce
2 teaspoons finely-grated, peeled ginger
2 pounds skinless/boneless chicken thighs
Directions:
- Whisk brown sugar, vinegar, chili paste, fish sauce, sriracha, and ginger in a large bowl.
- Add to chicken in a ziptop bag, mix, and marinate for at least 1-2 hours.
- Drain chicken, reserving marinade.
- Transfer marinade to a saucepan. Bring to a boil, reduce heat, and simmer until reduced by half (about 1 cup), 7–10 minutes. (Not the best smelling, so you may want to have the vent on!)
- Prepare grill for medium-high heat.
- Grill chicken, turning and basting often with reduced marinade, until cooked through, 8–10 minutes. Serve hot.
